Sweet treat fans, rejoice! There’s a new pastry shop headed to town, and we’re so excited! Well… not new exactly, their pastries are already loved all over the ATL, but the shop itself will be new!
Wait, what?
The Atlanta Journal-Constitution reported earlier this week that, “Atlanta-based pastry pop-up Galette announced on Instagram that it will open its first brick-and-mortar bakery in Avondale Estates in late summer 2024.”
The delicious European-style pastries are already a local favorite treat, and now, you don’t have to wait until you can find them at a farmer’s market!
Tell me about Galette!
According to The Atlanta Journal-Constitution, “Co-owners Morgan Perkins and Ashley Thomas founded Galette in 2017 as a business offering in-home cooking classes, but in 2019 they began selling their pastries at pop-ups and farmers markets around Atlanta. They acquired a cottage food license and for the past few years have been baking all of their goodies in Thomas’ kitchen. This will be their first physical location. The Avondale Estates location will be something of a homecoming for the pair since the Avondale Estates Farmers Market was one of their first markets.”
What a sweet, wonderful irony, to start your first pop up at a farmer’s market in the place that your business will eventually call its permanent home! And now we can grab their sweet treats any time we’d like!
And there’s more good news!
The Atlanta Journal-Constitution elaborated, “The bakery will give Thomas and Perkins an opportunity to expand their menu with savory items like ham and cheese croissants in addition to their normal array of pastries like seasonal fruit galettes and a range of croissants. They also plan to have a refrigerated pastry case, which means Thomas will be able to create entremets and other desserts with custards and creams, something that’s not possible at balmy Georgia farmers markets. As for Perkins, she hopes to introduce a small bread program so customers can pick up a loaf of bread in the morning or sandwiches in the afternoon. The pair also hope to offer cooking classes in the future.”
Great things are on the horizon for Galette! If you wanna keep up with their progress, check out their website!
