Everyone knows that New York City is the bagel capital of the world–but what if someone who didn’t necessarily set out to make NYC bagels better… did? That’s just what Adam Goldberg did during the beginning of the COVID pandemic, with his backyard window, now known as PopUp Bagels, in his house in Connecticut. Since then, they’ve gained fame and adoration… and several bagel shops in New York City. And now PopUp Bagels, known for their deliciously fresh bagels, is headed to the Atlanta Beltline. What is PopUp Bagels?

Like we said, PopUp Bagels is an unexpected and delicious bagel shop that came out of the early pandemic’s obsession with sourdough. Creator Adam Goldberg said in an interview with Resident Magazine,
It all started in my home kitchen during the pandemic. I was making sourdough bread, like many people at the time, but one day, I decided to try making bagels instead. I wanted something fun, something nostalgic. When I finally went back to a traditional bagel shop, I realized I didn’t miss their bagels—I missed the bagels of my youth, the ones that smelled like pure, fresh-baked dough and not deli ingredients… I started giving bagels away to friends and family, and soon I had to start selling them just to keep up. The community in Westport and beyond really rallied around us, offering kitchen space and support. Before I knew it, we were being named the best bagels in Connecticut while still baking from home.
Now PopUp Bagels is a bagel empire. With the slogan “not famous, but known,” PopUp Bagels took the Northeast by storm… and now they’re sharing their bagels with the rest of us… or, starting to! Their bagels are fresh, simple and no-frill. They serve up the perfect bagel with a crispy crust and soft crumb center, just the right size and with a perfect proportion of seeds.
Where will the Atlanta PopUp Bagels be located?

PopUp Bagels’ first Atlanta shop will open later this year along the Beltline’s Eastside Trail at 661 Auburn Avenue.
When will PopUp Bagels open?
Right now all we know is that PopUp Bagels is opening up sometime later this year. A sign on the window says “Hello bagel fans! See you soon.”
Additional stores planned for Buckhead and Dunwoody, and potential future sites in Midtown, Sandy Springs, Savannah, and Athens.
